5 Ways with Roasted Winter Squash

Our windowsills are fairly full of winter squashes that we’ve harvested over the past couple of weeks. They are such great comfort food when roasted, and there are plenty of ways to use them in different recipes. If you have a large squash, you can roast it up and use it to create several dishes to last the week.

To Roast Winter Squash:

Peel and chop the squash into chunky dice. Toss in olive oil, season well and roast at 200c for 25-30 mins until the squash starts to caramelise slightly at the sides.



Warm Squash & Feta Salad

If you have leftover roast squash, then this makes a lovely lunch to whip up, especially if you have lots of delicious winter salad leaves growing in your garden that you can harvest fresh.


Squash Risotto

This is the perfect comfort food and it is quick to prepare for a mid-week dinner. Also, if you have leftovers it’s quite fun making arancini by rolling little balls of leftover risotto in breadcrumbs and deep frying (give it a google!)


Cheat's Squash Stuffing

This really is a bit of a cheat, but it makes shop bought stuffing mix taste so much better, and it’s a good addition to any roast!


Squash, Kale & Mushroom Lasagne

A delicious and hearty veggie lasagne. You can make it in advance and then leave in the fridge for a day or two before cooking, so it’s a good one to prepare at the weekend for a mid-week meal.


Squash & Cheddar Soup

Possibly one of the most delicious soups to enjoy over the winter months – it’s a little different to the usual squash & ginger combination.
