This is a handy way to cook up a small glut of cherry tomatoes. You can serve them as a side or filler for sandwiches, jackets and so on, or mix them in with pasta dishes.
Ingredients
10-12 cherry tomatoes, halved
1-2tbsp olive oil
sea salt & pepper
1 tbsp basil leaves, chopped
1 tsp balsamic vinegar to drizzle
Method
Place the tomato halves in a roasting dish and drizzle generously with 1-2tbsp olive oil
Season well with sea salt and black pepper
Add a small drizzle of balsamic vinegar (approx 1 tsp)
Roast for 1 hour at 140c
Remove from the oven and sprinkle over freshly chopped basil
