Easy to grow from our potted plants

This tends to be a high yielding variety, and the sweet potatoes look exactly as you’d expect with bright orange flesh and thick red skin. Sweet potatoes will grow best in a greenhouse or polytunnel and will produce many tubers, but if you have a real suntrap of a garden, you could happily plant them outside in well draining soil. For container growing, choose nice deep pots, at least 50cm deep.

In the kitchen: A great addition to curries and stews. Sweet potato can be roasted to bring out the sweet caramelised flavour or mashed for a delicious alternative to mash potato.

Here are a few of our favourites to inspire you... a carrot soup, a delicious and vibrant spinach (or chard) soup, and ever-popular leek and potato soup.

Warming Carrot & Ginger Soup

Ingredients:

1tbsp olive oil
1 onion, diced
1 inch piece root ginger, grated
2-3 large carrots (450g) peeled & roughly chopped
600ml veg stock
juice of half lemon
1-2tsp honey (optional)
sea salt

Method:

Heat the olive oil in a large saucepan over a medium heat
Gently cook the onions until they start to become translucent
Add the carrot and ginger and cook for 1 minute, stirring all the time
Add the stock and bring to the boil.
Simmer for 20 minutes until the carrots are cooked through and slide easily off a knife.
Set aside to cool for a few minutes, and then liquidise, adding the lemon juice (and honey to taste if you'd like to sweeten it up a little) - you may need to add a little more water to loosen it up to the consistency you'd like.
Season with sea salt

Super Quick Spinach Soup

Ingredients:

1 medium onion, diced
1 clove garlic, crushed
1 small potato, diced
juice of half a lemon
200g chard or spinach leaves, stalks removed & roughly chopped
600ml veg stock
Sea salt & black pepper

Method:

Heat the olive oil in a large saucepan over a medium heat
Gently cook the onions until they start to become translucent
Add the potatoes and garlic and cook for 1 minute
Add the stock, bring to the boil and simmer for 20-25 minutes until the potatoes are cooked through and fall easily off a knife when skewered
Add the spinach/chard and cook for a further 2-3 minutes
Remove from the heat, add the lemon juice and liquidise well. Loosen with a little water if necessary.
Season to taste with sea salt and black pepper

Easy Leek & Potato Soup

Ingredients:

2 medium leeks, trimmed, washed and roughly sliced
1 medium potato, peeled & diced
Knob of butter
600ml veg stock
Pinch of Cornish Sea Salt's Lemon & Thyme Sea Salt (optional, but it's perfect for this soup if you have it in your store cupboard!) - alternatively, use a pinch of sea salt, black pepper and 1tsp fresh thyme leaves
1 tbsp single cream (optional)

Method:

Melt the butter in a large saucepan over a medium heat
Gently cook the leeks until they start to become translucent
Add the potatoes and cook for 1 minute
Add the stock, bring to the boil and simmer for 20-25 minutes until the potatoes are cooked through and fall easily off a knife when skewered
Remove from the heat, and liquidise well
Season to taste with lemon & thyme sea salt, or with sea salt, black pepper and 1tsp thyme leaves
Loosen with a little water if necessary. Stir in the cream and serve.

Oh, and I keep harvesting courgettes. Always courgettes! Here's what is on my list in case it inspires you at all:

Pull up old sweetcorn plants - I only have a couple of last cobs to harvest, so that will be a job for this weekend
Take down the climbing bean wigwam and tomato plants - mine are over now, so the plants can be pulled off and added to the compost, and bamboo canes set aside for next spring
Check mature brassicas for caterpillars, eggs and slugs - the last thing I want now is for the slugs to eat my brussels sprouts before Christmas, so the brassica bed will get a thorough check, and I'll be removing all those old, yellow leaves as well (as they tend to attract slugs)
Prune out winter squash - I'm just going to prune enough of the foliage that I know the squashes themselves will get plenty of autumn sunshine now so that they can ripen as much as possible before harvesting.
Earth up tall broccoli and sprouts plants - I like to try and do this ahead of the strong autumn winds that tend to come in. I may stake the sprouts, as they fell over easily last year.
Top up beds with fresh compost - early autumn is a good time to nourish the soil, so I'll be covering most beds with a layer of compost, and those that are being used for autumn crops will get an extra thick layer.
Rid the plot of rubbish - when I say rubbish, I mean all those things that I've left lying around, like pots that are not in use, watering cans, the hosepipe. I've learnt that these are all places for slugs to hide, and at this time of year there is a lot of slug activity going on!
Put tools away - I am a terrible garden tool owner. I leave everything dotted all over the place, but as the days get damper and rain is increasingly common, it's a good idea not to leave the rake and the secateurs out in the open.
Harvest last of the summer crops - I have a few beetroot plants left, whatever remaining courgettes come, a last batch of maincrop potatoes and a few carrots. Also, some leeks are looking a little on the large side, so I'll harvest them soon and make space for planting autumn seedlings soon.
Plant up for winter - I'll be getting loads of lovely winter leaves in the ground (land cress is my all time fave), as well as some good cabbage greens and a few other bits and bobs to see me through the winter. I usually top up my veg garden with a veg box delivery fortnightly which will have some more of the staples like potatoes and onions (once I've devoured my own which won't take long) but I love being able to harvest my own greens...!

Here are a few recipes & cooking tips.

Celeriac Gratin - Jamie Oliver.
North African Root Veg Stew - Riverford. Make this with or without the beef for a slightly spiced, warming meal.
Cornish Pasty - Cornish pasty Associations. If you've got swede to harvest, then there's nothing quite like a traditional Cornish pasty!
Roasted Root Frittata - River Cottage. This is a good way of using up leftovers after a Sunday roast.
Parsnip & Carrot Dal - Delicious. Dal is so delicious, and a great source of comfort food at this time of year.
And finally, a few quick ideas:
1. Root Mash - any combination of root veggies cooked up in a glorious mash is the best comfort food.
2. Roasted Root Veggies - if you're cooking up a Sunday roast, swap the potatoes for roasted roots. A little olive oil and seasoning is all that's needed.
3. Soup - Root veggies give soups a warming richness as well as helping to thicken a soup into something a bit more substantial when you're hungry.
4. Casseroles & Stews - Slow-cooking brings out the sweetness of the veg and gives you time to curl up in front of the fire with a good book before dinner.
5. Rosti - grated parsnip or celeriac with grated potato, onion and seasoning makes for a delicious rosti. Add a poached egg for a yummy breakfast!
