This is really easy to make and you can happily make it a few days before Christmas as the flavour improves after a day or two. You don’t need to stick rigidly to the recipe – if you prefer stronger flavours, add a little extra spice, and if you’ve got a sweet tooth you can add a splash of apple juice or a little extra sugar.
Ingredients:
- 1 red cabbage, finely shredded
- 1 large cooking apple, peeled and grated
- 2 red onions, peeled and finely sliced
- 3-4 tbs brown sugar
- 2-3 tbs red wine vinegar
- Half tsp cinnamon
- Half tsp ground cloves
- Half a nutmeg, finely grated
- Generous knob of butter
Method:
Mix everything together and put it into a casserole dish. Put a lid on it and cook it slowly in the oven at 140-160c for 2-3 hours. Give it a stir every so often.
That’s it. Simple as anything!
