Here’s our definitive guide to using up Christmas leftovers. Waste not want not and all that!
- Make stock from the turkey bones
- Turkey Pie is delicious – try to use the red meat if you have the choice, and any leftover leeks can be thrown in before adding a cheese sauce to the mixture. Puff pastry gets our vote.
- Bubble and Squeak is an easy go-to. Any brussels sprouts (particularly if you’ve cooked them with bacon and cream!) can be mixed up with mashed roasted potatoes.
- Roast Soup is one of the tastiest things. Add any leftover root veg, leeks, cauliflower cheese, bread sauce, stuffing and gravy. Top up with stock, heat and then whizz it all through the blender.
- Make potato cakes by mashing any leftover roasties.
- Mix cauliflower cheese into mashed potato for festive bangers and mash with leftover sausage meat, Christmas gravy and cranberry sauce.
- Make a risotto – this can use up leeks, turkey, stock and other veggies
- Baked camembert or brie with cranberry sauce – if you’ve overcatered on the cheese front, this is quite a good, fun dish to share
- Make a lentil stew – cook up some lentils in stock, and add any leftover kale, carrots, parsnips, potatoes, gravy and so on. Serve in bowls with crusty farmhouse bread.
- Veggie fritters are a good way to use up greens – just mix with egg and fry.
