I love Boxing Day leftovers, and I particularly enjoy concocting brunch with bits and bobs left from the huge roast the day before. This is a bit of a go-to for me…

Get any leftover roast potatoes and parsnips, and any roasted squash, and mash them all together (if you do it in a blender then it’ll break through any crunchy/chewy pieces) until you have a mashed potato kind of consistency. I usually add a bit of cream or butter to loosen it if needs be. Season with salt and pepper and roll into burger-shaped potato cakes.

Beat up an egg and dip each potato cake into the beaten egg, then roll in Panko breadcrumbs. Gently fry your potato cake in oil until it is golden brown on both sides.

Serve with poached egg and any leftover pigs-in-blankets. Yum.
